This is an adaptation of the Waffle recipe from Namaste Gluten Free Waffle & Pancake Mix. This version is egg-free but contains soy and pumpkin. Free from: Gluten Nuts Dairy Egg Contains: Soy Pumpkin Key change to original recipe: Substitute 1⁄4 cup canned pumpkin for each egg Add Enjoy Life Semi-Sweet Chocolate Mega Chunks Reduce all measures by half for a smaller yield Notes Per the Namaste recipe, you can substitute Rice milk or water for the soy milk used in our version of the recipe.
This is an adaptation of the Chocolate Chip Cookie recipe from Enjoy Life Mini Chips. Note that this version contains soy and coconut. The recipe provided on the back of the Enjoy Life Mini Chips package produces decent allergy-free cookies, but we found the texture to be a bit crispy and the bottoms of the cookies were greasy. My son has Eosinophilic esophagitis (EoE) and is allergic to wheat, dairy, eggs, tree nuts, barley, and legumes, among other foods. While the prevalence of gluten-free foods today makes it easier to manage meals, and he is fortunate enough to be able to eat meat, fish, corn, and soy, baking has remained a challenge. The purpose of this site is to share recipes that have worked well for us and might be helpful to others that have some of the same allergies.
