This is an adaptation of the Waffle recipe from Namaste Gluten Free Waffle & Pancake Mix. This version is egg-free but contains soy and pumpkin.

Per the Namaste recipe, you can substitute Rice milk or water for the soy milk used in our version of the recipe. You can also omit or replace the chocolate chunks.

  • 14 cup canned pumpkin
  • 1 tablespoon canola oil
  • 13 cup vanilla soy milk, plus 2-3 additional tablespoons as needed during mixing

Annotated Recipe

Preheat waffle iron. We now use a Mickey Mouse model after our Black & Decker Waffle Blocks stopped working.

Combine oil, pumpkin, and milk together in a bowl. Here they are before mixing:

Add the waffle mix to the bowl:

Add 2-3 additional tablespoons of milk to the batter:

Scoop some batter onto the waffle iron. We use about 13 cup for Mickey’s face and about 18 cup for each ear:

Cook for 2-4 minutes, depending on the temperature of your waffle iron.

Here’s the finished product. One of the chocolate chunks makes it look like Mickey is sticking his tongue out!

Serve with the topping of your choice. We use Trader Joe’s Organic Maple Syrup, Grade A Amber Color.

Steps:

  • Preheat waffle iron
  • Mix oil, pumpkin, and milk together in a mixing bowl
  • Add the waffle mix to the bowl and mix together
  • If the batter is too thick, add 2-3 additional tablespoons of milk to the batter and mix again
  • Add the chocolate chunks and mix together
  • Scoop batter onto the waffle iron
  • Cook for 2-4 minutes, depending on the temperature of your waffle iron
  • Serve with the topping of your choice
